Yellow Lentil Soup
Yellow lentil soup is a traditional, nutritious, and delicious dish.
Ingredients
- 1 cup yellow lentils washed
- 1 small onion chopped
- 2 cloves garlic minced
- 1 medium carrot diced
- 1 cup celery chopped
- 1 teaspoon olive oil
- 6 cups water or vegetable broth
- 1 teaspoon cumin
- Salt to taste
- A pinch of black pepper
- Juice of half a lemon optional
- Parsley chopped (for garnish, optional)
Instructions
- Heat the olive oil in a pot over medium heat. Add the onion and garlic and sauté until softened.
- Add the carrot and celery and stir for 3-4 minutes. Then, add the lentils and water (or broth).
- Season with cumin, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat and let the soup simmer for 25-30 minutes, until the lentils and vegetables are completely tender.
- Blend the soup with an electric blender until smooth.
- Stir in the lemon juice. Ladle the soup into serving bowls, garnish with chopped parsley, and serve hot.
