Yellow Lentil Soup
Yellow lentil soup is a traditional, nutritious, and delicious dish.

- 1 cup yellow lentils washed
- 1 small onion chopped
- 2 cloves garlic minced
- 1 medium carrot diced
- 1 cup celery chopped
- 1 teaspoon olive oil
- 6 cups water or vegetable broth
- 1 teaspoon cumin
- Salt to taste
- A pinch of black pepper
- Juice of half a lemon optional
- Parsley chopped (for garnish, optional)
Heat the olive oil in a pot over medium heat. Add the onion and garlic and sauté until softened.
Add the carrot and celery and stir for 3-4 minutes. Then, add the lentils and water (or broth).
Season with cumin, salt, and black pepper. Bring the mixture to a boil.
Reduce the heat and let the soup simmer for 25-30 minutes, until the lentils and vegetables are completely tender.
Blend the soup with an electric blender until smooth.
Stir in the lemon juice. Ladle the soup into serving bowls, garnish with chopped parsley, and serve hot.
