Yellow Lentil Soup

Yellow lentil soup is a traditional, nutritious, and delicious dish.

Ingredients
  

  • 1 cup yellow lentils washed
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 medium carrot diced
  • 1 cup celery chopped
  • 1 teaspoon olive oil
  • 6 cups water or vegetable broth
  • 1 teaspoon cumin
  • Salt to taste
  • A pinch of black pepper
  • Juice of half a lemon optional
  • Parsley chopped (for garnish, optional)

Instructions
 

  • Heat the olive oil in a pot over medium heat. Add the onion and garlic and sauté until softened.
  • Add the carrot and celery and stir for 3-4 minutes. Then, add the lentils and water (or broth).
  • Season with cumin, salt, and black pepper. Bring the mixture to a boil.
  • Reduce the heat and let the soup simmer for 25-30 minutes, until the lentils and vegetables are completely tender.
  • Blend the soup with an electric blender until smooth.
  • Stir in the lemon juice. Ladle the soup into serving bowls, garnish with chopped parsley, and serve hot.
