Zucchini with Olive Oil

Zucchini is an ideal vegetable for anyone following a healthy diet.

Ingredients
  

  • 4 medium zucchinis washed and cut
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic minced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon oregano
  • Juice of half a lemon optional
  • A pinch of red pepper flakes

Instructions
 

  • Wash the zucchinis well and cut them into slices or sticks of the same size.
  • In a pan over medium heat, add the olive oil and the minced garlic. Sauté for about one minute until the garlic is fragrant.
  • Add the zucchini slices to the pan and toss them well with the garlic and olive oil.
  • Add the salt, black pepper, and oregano. Continue to stir the zucchini occasionally until they become tender and slightly golden, for about 5-7 minutes.
  • Once the zucchini is cooked, remove the pan from the heat.
  • Add the lemon juice and a pinch of red pepper flakes for a fresh and spicy flavor. Serve the zucchini hot.
