Yogurt & Fruit Parfait
A parfait is an easy, quick, and light French dessert made with layers of yogurt and fresh, dried, or frozen fruits.

- For the Granola:
- 1.5 cups oats
- 1/2 cup wheat flour
- 1/4 cup brown sugar
- 1/4 cup honey
- 1/2 cup berries
- 1/2 cup dried cherries
- 1/2 cup almonds
- 1 egg white
- For the Parfait:
- 2 cups yogurt
- 1/2 teaspoon vanilla extract
- 1 cup strawberries sliced
- Berries as desired
Make the Granola: In a bowl, mix all the granola ingredients together, except for the yogurt, strawberries, and fresh berries.
Bake the Granola: Spread the mixture on a baking tray lined with parchment paper. Bake in a preheated oven at 160°C (320°F) for 35 minutes, stirring every 10 minutes. Let it cool completely before using, then break it into pieces.
Assemble the Parfait: In serving glasses, create layers: start with the baked granola, then a layer of yogurt, followed by strawberry slices and berries. You can add any other fruits you like.
Serve: Serve the parfait chilled.
