Vegetable & Oatmeal Soup

Ingredients
  

  • 1 cup oats
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 onion finely chopped
  • 1 carrot cut into small cubes
  • 1 zucchini cut into small cubes
  • 1 head of broccoli cut into small florets
  • ½ cup celery cut into small pieces
  • 4 cups chicken broth
  • Salt to taste
  • Black pepper to taste
  • A little fresh coriander chopped, for garnish

Instructions
 

  • In a deep pot, heat the vegetable oil. Add the onion and garlic and stir until the onion softens.
  • Add the carrot, zucchini, broccoli, and celery to the pot. Stir for about 2 minutes.
  • Add the oats and broth to the vegetables. Season with salt and black pepper.
  • Cover the pot and let the mixture simmer over medium heat for 20-25 minutes, or until the oats and vegetables are cooked.
  • Serve the soup hot, garnished with chopped fresh coriander if desired.
