Ingredients
  

  • Tuna: 1 can drained
  • Eggs: 3 boiled and sliced
  • Tomato: 2 diced
  • Onion: 2 finely diced
  • Arugula: 4 cups
  • Olives: 1 cup
  • Mayonnaise: ¼ cup light
  • Mustard: 1 teaspoon
  • Lemon Juice: 2 tablespoons
  • Olive Oil: 2 tablespoons
  • Lettuce: 1 cup leaves
  • Salt: A pinch
  • Black Pepper: A pinch

Instructions
 

  • Place the tuna, lettuce leaves, tomato, onion, olives, and arugula in a serving bowl.
  • In a separate bowl, mix the mayonnaise, lemon juice, olive oil, mustard, salt, and black pepper.
  • Pour the dressing over the vegetables in the serving bowl and toss the ingredients until well combined.
  • Place the boiled eggs on top and serve.
