Tuna Pasta Salad

This is a simple and healthy tuna pasta salad, perfect for a diet.

Ingredients
  

  • For the Dressing:
  • Lemon juice: 3 tablespoons
  • Olive oil: ¼ cup
  • Yogurt: 2 tablespoons
  • Mustard: ½ teaspoon
  • Garlic powder: ¼ teaspoon
  • Salt: ½ teaspoon
  • Black pepper: ¼ teaspoon
  • Parsley: 1 ¼ tablespoons chopped
  • For the Salad:
  • 1 packet of penne pasta
  • 2 cans of tuna
  • Onion: ½ cup chopped
  • Cherry tomatoes: 1 cup cut in half
  • Olives: ½ cup pitted
  • Cucumber: 1 cup diced
  • Capers: 3 tablespoons drained

Instructions
 

  • Cook the pasta in a pot of salted boiling water for 10-12 minutes (or as directed on the package). Drain the pasta, rinse it with water, and set it aside to cool down.
  • To make the dressing: In a medium bowl, mix the lemon juice, olive oil, yogurt, mustard, garlic powder, salt, black pepper, and chopped parsley.
  • In a large serving bowl, combine the cooled pasta, tuna, cucumber, onion, tomatoes, olives, and capers. Pour the dressing over the top and gently toss everything together until it's mixed well.
  • Serve your diet tuna pasta salad immediately. Enjoy
