- 4 fresh eggs
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup skim milk
- 1 bell pepper any color, chopped
- 1 teaspoon cooking spray
In a large bowl, whisk the eggs. Add the salt, black pepper, and milk. Mix until all the ingredients are well combined.
Add the chopped bell pepper to the egg mixture and stir.
Heat a medium-sized pan over the stove and coat it with cooking spray. Pour in the egg mixture.
Reduce the heat to medium-low. Cover the pan and cook until the eggs are almost set. Then, flip the eggs and cook for another minute to ensure they are fully cooked.
Serve the eggs hot with toast on the side.
