Ingredients
  

  • 4 fresh eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup skim milk
  • 1 bell pepper any color, chopped
  • 1 teaspoon cooking spray

Instructions
 

  • In a large bowl, whisk the eggs. Add the salt, black pepper, and milk. Mix until all the ingredients are well combined.
  • Add the chopped bell pepper to the egg mixture and stir.
  • Heat a medium-sized pan over the stove and coat it with cooking spray. Pour in the egg mixture.
  • Reduce the heat to medium-low. Cover the pan and cook until the eggs are almost set. Then, flip the eggs and cook for another minute to ensure they are fully cooked.
  • Serve the eggs hot with toast on the side.
