Clean the chicken thoroughly and pat it dry. Marinate it with a mix of the spices, balsamic vinegar, and grated onion. Rub it in well and set it aside for 15 minutes.
Place the sliced onions, carrots, squash, and yellow bell peppers in an oven dish (Tajin). Season them with a little of the spice mix and a drizzle of olive oil.
Place the chicken pieces on top of the vegetables. Add a little more olive oil and half a cup of broth.
Put the dish in the oven for 35 minutes, or until the chicken is cooked through and the vegetables are tender.
