Roasted Chicken with Squash

Ingredients
  

  • 1 whole chicken cut into 8 pieces
  • ½ kg squash peeled and chopped
  • ½ kg carrots cut into thin sticks
  • ½ kg onion grated
  • Chicken broth as needed
  • Salt to taste
  • Black pepper to taste
  • Cumin to taste
  • ¼ teaspoon red chili pepper
  • Cinnamon to taste
  • Bay leaf dried/powdered, to taste
  • 2 yellow bell peppers
  • 2 onions sliced
  • ¼ cup balsamic vinegar

Instructions
 

  • Clean the chicken thoroughly and pat it dry. Marinate it with a mix of the spices, balsamic vinegar, and grated onion. Rub it in well and set it aside for 15 minutes.
  • Place the sliced onions, carrots, squash, and yellow bell peppers in an oven dish (Tajin). Season them with a little of the spice mix and a drizzle of olive oil.
  • Place the chicken pieces on top of the vegetables. Add a little more olive oil and half a cup of broth.
  • Put the dish in the oven for 35 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve the dish hot.
