Quinoa with Roasted Vegetables

- 1 cup quinoa cooked
- 1 zucchini cut into medium cubes
- 1 eggplant cut into medium cubes
- 2 colored bell peppers cut into medium cubes
- 1 tomato cut into medium cubes
- 1 onion cut into medium cubes
- 1 carrot cut into medium cubes
- 1 cup pumpkin cut into medium cubes
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander powder
- A pinch of salt
- A pinch of black pepper
- Fresh basil as desired (for garnish)
- 1 tablespoon lemon juice
Wash the vegetables and cut them into medium-sized pieces.
Place the vegetables on a baking tray, drizzle with olive oil, and season with salt, black pepper, cumin, and coriander powder. Roast them in the oven until they are tender and cooked through.
Place the cooked quinoa on a serving plate.
Add the roasted vegetables on top.
Drizzle the dish with a little lemon juice and garnish with fresh basil. Serve immediately.
