Quinoa with Roasted Vegetables

This meal is an excellent and healthy choice for anyone following a weight loss diet.

Ingredients
  

  • 1 cup quinoa cooked
  • 1 zucchini cut into medium cubes
  • 1 eggplant cut into medium cubes
  • 2 colored bell peppers cut into medium cubes
  • 1 tomato cut into medium cubes
  • 1 onion cut into medium cubes
  • 1 carrot cut into medium cubes
  • 1 cup pumpkin cut into medium cubes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder
  • A pinch of salt
  • A pinch of black pepper
  • Fresh basil as desired (for garnish)
  • 1 tablespoon lemon juice

Instructions
 

  • Wash the vegetables and cut them into medium-sized pieces.
  • Place the vegetables on a baking tray, drizzle with olive oil, and season with salt, black pepper, cumin, and coriander powder. Roast them in the oven until they are tender and cooked through.
  • Place the cooked quinoa on a serving plate.
  • Add the roasted vegetables on top.
  • Drizzle the dish with a little lemon juice and garnish with fresh basil. Serve immediately.
