Ingredients
  

  • For the Dressing:
  • Salt: ½ teaspoon
  • Mustard: 1 tablespoon
  • Rosemary: ¼ teaspoon dried
  • Lemon Juice: 2 tablespoons
  • Honey: 1 teaspoon
  • For the Salad:
  • Sweet Potato: 1 large / boiled, peeled, and cubed
  • Cabbage: As desired coarsely chopped
  • Feta Cheese: ½ cup cut into cubes
  • Quinoa: ¼ cup boiled and drained

Instructions
 

  • In a small bowl, mix the dressing ingredients together until well combined.
  • Place the cabbage leaves in a serving dish, then top with the quinoa, followed by the sweet potato cubes.
  • Pour the prepared dressing over the salad in the dish, then distribute the feta cheese cubes on top. Serve immediately.
