Quinoa Salad with Sweet Potato

- For the Dressing:
- Salt: ½ teaspoon
- Mustard: 1 tablespoon
- Rosemary: ¼ teaspoon dried
- Lemon Juice: 2 tablespoons
- Honey: 1 teaspoon
- For the Salad:
- Sweet Potato: 1 large / boiled, peeled, and cubed
- Cabbage: As desired coarsely chopped
- Feta Cheese: ½ cup cut into cubes
- Quinoa: ¼ cup boiled and drained
In a small bowl, mix the dressing ingredients together until well combined.
Place the cabbage leaves in a serving dish, then top with the quinoa, followed by the sweet potato cubes.
Pour the prepared dressing over the salad in the dish, then distribute the feta cheese cubes on top. Serve immediately.
