Rinse the quinoa thoroughly under cold running water several times.
Boil one cup of quinoa with 2 cups of water and salt to taste.
Once boiling, reduce the heat, cover the pot, and let it simmer for 15-20 minutes, or until the quinoa has absorbed all the liquid and the grains are separate and tender.
Let the quinoa cool completely before using, as this helps the burgers hold together.
In a large bowl, combine the cooked and cooled quinoa, grated carrot, chopped onion, parsley, cilantro, egg, oat flour, mixed spices, black pepper, and salt.
Mix all ingredients well with your hands until fully combined and moldable. Divide the mixture into 4-6 equal portions and shape them into slightly thick burger patties.
Heat the olive oil in a non-stick pan over medium heat.
Place the burger patties in the pan and cook for 5-7 minutes on each side, or until golden brown.
Serve the quinoa burgers with whole wheat burger buns or large lettuce leaves, alongside tomato slices, lettuce, and onion.
