Protein Salad
Protein salad is known for its balance of proteins, fiber, and essential nutrients that the body needs while following a weight loss diet.

- 1 cup chickpeas soaked and boiled
- 3 tablespoons corn boiled
- 1/2 red bell pepper finely chopped
- 1/2 green bell pepper finely chopped
- 2 spring onions thinly sliced
- 1 bunch parsley finely chopped
- Juice of 1 lemon
- 1 tablespoon white vinegar or apple cider vinegar
- 1 teaspoon ground cumin
- 1 tablespoon extra virgin olive oil
In a deep bowl, combine the boiled chickpeas, corn, red bell pepper, green bell pepper, spring onions, and chopped parsley.
Add the lemon juice, vinegar, cumin, and olive oil to the bowl. Toss everything together until the flavors are well combined.
Refrigerate the protein salad for 30 minutes. Then transfer it to a serving plate and serve cold.
