Protein Salad

Protein salad is known for its balance of proteins, fiber, and essential nutrients that the body needs while following a weight loss diet.

Ingredients
  

  • 1 cup chickpeas soaked and boiled
  • 3 tablespoons corn boiled
  • 1/2 red bell pepper finely chopped
  • 1/2 green bell pepper finely chopped
  • 2 spring onions thinly sliced
  • 1 bunch parsley finely chopped
  • Juice of 1 lemon
  • 1 tablespoon white vinegar or apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 tablespoon extra virgin olive oil

Instructions
 

  • In a deep bowl, combine the boiled chickpeas, corn, red bell pepper, green bell pepper, spring onions, and chopped parsley.
  • Add the lemon juice, vinegar, cumin, and olive oil to the bowl. Toss everything together until the flavors are well combined.
  • Refrigerate the protein salad for 30 minutes. Then transfer it to a serving plate and serve cold.
