Ingredients
  

  • 2 medium Potatoes peeled and cut into cubes
  • 1/2 cup Oats
  • 1 small Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • Salt to taste
  • Black Pepper to taste
  • Parsley chopped, for garnish

Instructions
 

  • Sauté Aromatics: In a pot over medium heat, warm the olive oil. Add the chopped onion and cook until it softens.
  • Add Garlic: Add the minced garlic and stir for about one minute until fragrant.
  • Cook Potatoes: Add the potato cubes to the pot and stir for two minutes.
  • Add Broth: Pour the vegetable broth into the pot and bring it to a boil.
  • Add Oats: Add the oats to the pot and reduce the heat.
  • Simmer: Let the soup cook for 15-20 minutes until the potatoes are tender.
  • Blend: Using an immersion blender, partially blend some of the potatoes in the soup to create a creamy texture.
  • Season: Season the soup with salt and black pepper to your taste.
  • Serve: Garnish the soup with chopped parsley and serve it hot.
