To make the filling: Put all the filling ingredients in a food processor and mix them well.
To make the dough: Mix the oats, flours, shortening, and butter until you get a coarse, crumbly mixture.
In a separate bowl, whisk the yogurt and egg together. Then, mix them with the flour mixture.
Divide the dough into two halves and roll them out into separate sheets to form the top and bottom of the pop tarts.
Add the filling to one side of the dough. Place the other dough sheet on top and press the edges together with your fingers to seal them.
Avoid adding extra sugar and fat. Instead of decorating with cream, you can sprinkle a little cinnamon on top of your finished low-calorie pastries.
