Pomegranate Vegetable Salad

This salad is rich in fiber, vitamins, and minerals, and low in calories.

Ingredients
  

  • Pomegranate: 1 cup fresh seeds
  • Lettuce: ½ cup chopped
  • Arugula: ½ cup leaves
  • Cucumber: ½ cup diced small
  • Tomato: ½ cup diced small
  • Bell Pepper: ½ cup diced small
  • Red Onion: ¼ cup thinly sliced
  • Fresh Cilantro: ½ cup chopped
  • Lemon Juice: 2 tablespoons fresh
  • Olive Oil: 1 tablespoon extra virgin
  • Pomegranate Molasses: 1 teaspoon
  • Salt: a pinch
  • Black Pepper: a pinch
  • Dried Mint: a pinch
  • Mint Leaves: for garnish fresh

Instructions
 

  • In a large, deep glass bowl, combine the lettuce (or arugula), cucumber, tomato, bell pepper, red onion, and cilantro. Toss the ingredients gently to mix.
  • In a small bowl, whisk together the lemon juice, olive oil, pomegranate molasses, salt, black pepper, and dried mint until the dressing is well combined.
  • Add the fresh pomegranate seeds to the bowl of vegetables, then pour the dressing over the salad.
  • Gently toss the salad again until all the ingredients are coated with the dressing.
  • Garnish the salad with some fresh mint leaves or an extra sprinkle of pomegranate seeds.
  • Serve the pomegranate vegetable salad immediately while fresh.
