In a bowl, mix the almond flour, sugar substitute, egg, salt, peanut butter, and melted butter until all ingredients are well combined and a consistent dough forms.
Line a baking tray with two sheets of parchment paper.
Using an ice cream scoop, divide the dough into 10 balls and place them on the prepared baking sheet.
Gently press down on each ball to flatten it.
Bake for about 12 minutes, rotating the tray halfway through, until the cookies are fragrant and lightly golden.
Remove the cookies from the oven and transfer them to a wire rack to cool completely before serving.
