Peanut Butter Cookies

Ingredients
  

  • Sugar: 3 tablespoons sugar substitute
  • Butter: ½ cup unsalted, melted
  • Almond Flour: 1 cup
  • Peanut Butter: ½ cup
  • Egg: 1 large
  • Salt: a pinch

Instructions
 

  • Preheat the oven to 180°C (350°F) for 5 minutes.
  • In a bowl, mix the almond flour, sugar substitute, egg, salt, peanut butter, and melted butter until all ingredients are well combined and a consistent dough forms.
  • Line a baking tray with two sheets of parchment paper.
  • Using an ice cream scoop, divide the dough into 10 balls and place them on the prepared baking sheet.
  • Gently press down on each ball to flatten it.
  • Bake for about 12 minutes, rotating the tray halfway through, until the cookies are fragrant and lightly golden.
  • Remove the cookies from the oven and transfer them to a wire rack to cool completely before serving.
