- Tomatoes: 2 diced
- Eggplant: 1 diced
- Zucchini: 2 diced
- Red Bell Pepper: 1 cut into squares
- Onion: 1 sliced
- Salt: 1 teaspoon
- Oregano: 1 teaspoon
- Olive Oil: 3 tablespoons
- Black Pepper: 1/2 teaspoon
- Hot Water: 1/4 cup
In a baking dish, mix the onion, eggplant, tomatoes, bell pepper, and zucchini.
Add the olive oil, salt, black pepper, and oregano. Toss to coat.
Add the hot water, cover the dish with aluminum foil, and bake in a preheated oven at 200°C (400°F) for 25 minutes.
Remove the foil and roast for another 10 minutes to brown. Serve hot alongside grilled meat or chicken.
