Ingredients
  

  • Tomatoes: 2 diced
  • Eggplant: 1 diced
  • Zucchini: 2 diced
  • Red Bell Pepper: 1 cut into squares
  • Onion: 1 sliced
  • Salt: 1 teaspoon
  • Oregano: 1 teaspoon
  • Olive Oil: 3 tablespoons
  • Black Pepper: 1/2 teaspoon
  • Hot Water: 1/4 cup

Instructions
 

  • In a baking dish, mix the onion, eggplant, tomatoes, bell pepper, and zucchini.
  • Add the olive oil, salt, black pepper, and oregano. Toss to coat.
  • Add the hot water, cover the dish with aluminum foil, and bake in a preheated oven at 200°C (400°F) for 25 minutes.
  • Remove the foil and roast for another 10 minutes to brown. Serve hot alongside grilled meat or chicken.
