In a bowl, mix the oats, flour, baking powder, salt, and thyme until combined.
In another deep bowl, whisk the eggs, milk, and olive oil well using an electric mixer.
Add the oat and flour mixture to the egg and milk mixture. Then, add the onion, tomato, carrot, bell pepper, and green onions. Mix all the ingredients together.
Add the feta and cheddar cheese, and mix again until you get a semi-liquid batter.
Lightly grease a non-stick pan with olive oil and place it over medium heat.
Pour about a quarter cup of the pancake batter into the pan. Cook for about 2 minutes on each side until golden brown and cooked through. Repeat the process until all the batter is used.
Place the oatmeal and veggie pancakes on a serving plate and serve hot.
