Preheat the oven to 180°C (350°F).
Line a baking tray with parchment paper.
In a large bowl, mix the oat flour, maple syrup, and coconut butter until you get a smooth and firm dough. (If your dough is too sticky to shape, put it in the refrigerator for a few minutes to firm up).
Make medium-sized balls from the dough and place them on the prepared baking tray.
Repeat until you use all the dough, leaving some space between the cookies on the tray.
Gently press down on each ball with your palm to flatten it.
Bake the cookies in the oven for about 10 minutes, until they are cooked through.
Let the oatmeal cookies cool completely before placing them on a serving plate and serving.
