Oatmeal & Chicken Diet Soup
Try this oatmeal soup, which is rich in protein and fiber, and also low in calories.

- 1 Chicken Breast boneless, boiled, and cut into small cubes
- 1 cup Oats quick-cooking
- 1 medium Onion chopped
- 1 medium Carrot cut into small cubes
- 2 cups Chicken Broth low-fat
- 1 teaspoon Olive Oil
- Salt to taste
- Black Pepper to taste
- Parsley chopped, for garnish
- Lemon for serving
Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until it softens. Then, add the carrot and cook for another 5 minutes.
Add Broth and Oats: Pour the chicken broth into the pot. Then, add the oats, salt, and black pepper. Stir the ingredients well and bring the soup to a boil.
Simmer: Reduce the heat and let the soup cook for 15-20 minutes, or until the oats and vegetables are tender.
Add Chicken: Add the boiled chicken cubes and stir them into the soup. Let it cook for another 5 minutes.
Serve: Pour the soup into serving bowls. Garnish with chopped parsley and serve hot with a side of lemon.
