Ingredients
  

  • 1 kg Chicken Breast cut into medium pieces
  • 4 tablespoons Olive Oil
  • 5 cloves Garlic minced
  • 1 teaspoon Dried Mint
  • 1/2 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 Lemons juiced
  • 1 Eggplant cut into medium pieces
  • 1 Onion cut into pieces
  • 2 Bell Peppers assorted colors, cut into medium pieces
  • 2 Lemons cut into pieces

Instructions
 

  • In a large bowl, mix the chicken with 2 tablespoons of olive oil, garlic, dried herbs, salt, and pepper. Let it marinate for 30 minutes.
  • Whisk the remaining olive oil with the lemon juice. Preheat the grill to the highest setting.
  • Thread the chicken, eggplant, onion, and bell peppers onto 8 wooden skewers, placing a piece of lemon at the end of each. For an enhanced taste, season with salt and pepper, then brush them with the oil and lemon mixture.
  • Grill for about 9 minutes, or until the chicken is fully cooked.
