Ingredients
  

  • 3 cups brown rice cooked
  • 1 cup peas cooked
  • 1 cup fresh mushrooms sliced
  • 1 cup chickpeas cooked and peeled
  • 1 cup carrots peeled and diced
  • 1 cup green beans cut
  • 1 teaspoon garlic minced
  • 1 onion chopped
  • 1 vegetable bouillon cube
  • 2 tablespoons olive oil
  • A pinch of salt
  • A pinch of black pepper ground
  • 1 tablespoon parsley chopped
  • ¼ cup water

Instructions
 

  • Heat the olive oil in a pot over medium heat. Add the onion and sauté until it softens.
  • Add the garlic, carrots, and green beans. Stir the ingredients for a few minutes.
  • Add the peas, chickpeas, mushrooms, and chopped parsley. Mix well and season the vegetables with salt, black pepper, and the vegetable bouillon cube.
  • Add the cooked brown rice and water, and stir well.
  • Transfer the brown rice with vegetables to a serving dish and serve hot.
