- 500 grams chicken breast boiled and cubed
- 4 tablespoons olive oil
- 1/2 bunch celeriac large, cut into cubes
- 1 cup celery chopped
- 6 cups unsalted chicken broth
- 1/4 cup carrot cubed
- 1/2 cup onion cubed
- 1 clove garlic sliced
- 1 teaspoon lemon zest
- 1 bay leaf
- 1 tablespoon garlic herb seasoning mix
- 1 teaspoon chicken bouillon powder
- 1 teaspoon lemon juice mixed with water
- A pinch of salt
- A pinch of black pepper
Heat the olive oil in a pot over medium heat. Add all the vegetables, lemon zest, and bay leaf. Sauté the ingredients for a few minutes.
Add the garlic herb seasoning, chicken broth, and the lemon-water mixture. Stir the mix, then cover the pot and let it cook for about 4 minutes.
Reduce the heat and let the pot simmer until the vegetables are fully cooked. You can check if they're done by piercing them with a fork.
