Ingredients
  

  • For the Dressing:
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • A pinch of salt
  • A pinch of black pepper
  • For the Salad:
  • 2 tortilla breads made from corn flour
  • 250 g ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 head of lettuce chopped
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • ½ cup cheddar cheese shredded
  • ¼ cup red onion chopped
  • 1 bell pepper finely diced

Instructions
 

  • Heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened.
  • Add the ground beef and cook until it browns. Season with taco seasoning, salt, and black pepper, and mix well.
  • Let the meat cook over low heat until fully done.
  • Toast the tortilla breads in the oven in a deep bowl so they form a bowl shape.
  • In the toasted tortilla bowls, place the chopped lettuce, bell pepper, avocado, cherry tomatoes, cheese, red onion, and cilantro. Add the cooked ground beef on top.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Drizzle the dressing over the salad and toss gently.
  • Serve the Keto Taco Salad immediately.
