In a blender, combine the fresh cilantro, lime zest, lime juice, minced garlic, salt, black pepper, ground coriander, and olive oil.
Blend the ingredients until they are completely mixed and smooth.
Place the chicken in a large, sealable bag and add the marinade to it.
Press the air out of the bag and seal it tightly. Gently press the marinade around the chicken pieces to coat them completely. Refrigerate for a full night (or at least a few hours) so the chicken absorbs the marinade.
Lightly oil the grill and preheat it to medium heat.
Place the chicken breasts on the grill. Grill for about 5 minutes on each side, or until fully cooked.
Transfer to a serving platter and serve hot.
