Grilled Chicken with Vegetables

Ingredients
  

  • Chicken Breast: 8 breasts washed
  • Garlic: 2 cloves crushed
  • Onion: 1 sliced
  • Red Bell Pepper: 1 sliced
  • Green Bell Pepper: 1 sliced
  • Yellow Bell Pepper: 1 sliced
  • Mushrooms: 1 can
  • Potatoes: 2 cut into large pieces
  • Salt: 1 teaspoon
  • Black Pepper: 1 teaspoon ground
  • Paprika: ½ teaspoon
  • Olive Oil: 1 tablespoon
  • Dried Thyme: 1 tablespoon
  • Lemon Juice: ½ a lemon

Instructions
 

  • In a deep bowl, mix the garlic, olive oil, salt, black pepper, and paprika. Add the chicken and let it marinate in the refrigerator for about 2 hours.
  • Place the mushrooms, potatoes, onion, and bell peppers in an oven tray.
  • Sprinkle the vegetables with a pinch of salt and black pepper. Then, place the marinated chicken on top of the vegetables.
  • Grill the tray of chicken and vegetables in the oven for about 1 hour, until fully cooked.
  • Place the grilled chicken and vegetables on a serving plate. Add the lemon juice and dried thyme on top, and serve hot.
