In a deep bowl, mix the garlic, olive oil, salt, black pepper, and paprika. Add the chicken and let it marinate in the refrigerator for about 2 hours.
Place the mushrooms, potatoes, onion, and bell peppers in an oven tray.
Sprinkle the vegetables with a pinch of salt and black pepper. Then, place the marinated chicken on top of the vegetables.
Grill the tray of chicken and vegetables in the oven for about 1 hour, until fully cooked.
Place the grilled chicken and vegetables on a serving plate. Add the lemon juice and dried thyme on top, and serve hot.
