In a blender, combine the fresh coriander, lemon zest, lemon juice, minced garlic, salt, black pepper, ground coriander, and olive oil.
Blend the ingredients until they are completely mixed and smooth.
Place the chicken breasts in a large, sealable plastic bag and add the marinade to it.
Press the air out of the bag and seal it tightly. Gently press the marinade around the chicken breasts until they are fully coated. Place the bag in the refrigerator for one full night so the chicken can absorb the marinade.
Brush the grill with a little oil and heat it over medium heat.
Place the chicken breasts on the grill. Grill for about 5 minutes on each side until they are completely cooked.
Place them on a serving plate and serve hot.
