Ginger Cauliflower Rice

Ingredients
  

  • 250 g Cauliflower florets
  • 2 tablespoons Olive Oil
  • 1/4 cup Fresh Coriander
  • A pinch of Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Ginger ground
  • Zest of 1 Lemon

Instructions
 

  • Wash the cauliflower florets well and cut them into medium-sized pieces. Then, place them in a food processor and pulse until they are broken down into very small pieces, like grains of rice.
  • Dry the grated cauliflower by spreading it on parchment paper and pressing it with a dry cloth.
  • Heat a wide, non-stick pan over the fire. Add the olive oil, then the grated cauliflower. Stir a little, then season with salt, ginger, black pepper, and lemon zest. Cook until the cauliflower begins to soften slightly.
  • Turn off the heat, add the coriander, and stir it into the "rice."
  • Pour the cauliflower rice directly into a serving dish and serve hot.
