Wash the cauliflower florets well and cut them into medium-sized pieces. Then, place them in a food processor and pulse until they are broken down into very small pieces, like grains of rice.
Dry the grated cauliflower by spreading it on parchment paper and pressing it with a dry cloth.
Heat a wide, non-stick pan over the fire. Add the olive oil, then the grated cauliflower. Stir a little, then season with salt, ginger, black pepper, and lemon zest. Cook until the cauliflower begins to soften slightly.
Turn off the heat, add the coriander, and stir it into the "rice."
Pour the cauliflower rice directly into a serving dish and serve hot.
