Fattoush with Grilled Chicken

Levantine Fattoush salad is one of the healthy types of salads that can be eaten while following a diet.

Ingredients
  

  • For the Dressing:
  • ½ teaspoon salt
  • 2 tablespoons pomegranate molasses
  • 1 lemon juiced
  • 1 tablespoon olive oil
  • 1 tablespoon sumac
  • For the Salad:
  • 2 tomatoes chopped
  • 1 spring onion stalk chopped
  • ¼ cup parsley chopped
  • ¼ cup mint chopped
  • 2 eggplants cut into cubes and oven-roasted
  • 2 chicken breasts grilled and sliced
  • 1 cup pita bread toasted in the oven

Instructions
 

  • In a bowl, mix all the salad ingredients together, except for the bread and chicken.
  • Mix the dressing ingredients and toss them with the vegetables until well combined.
  • Place the toasted bread on top of the salad, add the grilled chicken, and serve immediately.
