Fattoush with Grilled Chicken
Levantine Fattoush salad is one of the healthy types of salads that can be eaten while following a diet.

- For the Dressing:
- ½ teaspoon salt
- 2 tablespoons pomegranate molasses
- 1 lemon juiced
- 1 tablespoon olive oil
- 1 tablespoon sumac
- For the Salad:
- 2 tomatoes chopped
- 1 spring onion stalk chopped
- ¼ cup parsley chopped
- ¼ cup mint chopped
- 2 eggplants cut into cubes and oven-roasted
- 2 chicken breasts grilled and sliced
- 1 cup pita bread toasted in the oven
In a bowl, mix all the salad ingredients together, except for the bread and chicken.
Mix the dressing ingredients and toss them with the vegetables until well combined.
Place the toasted bread on top of the salad, add the grilled chicken, and serve immediately.
