Couscous Tabbouleh

Ingredients
  

  • For the Dressing:
  • Lemon: 2
  • Olive Oil: ¼ cup
  • Salt: 1 teaspoon
  • For the Salad:
  • Parsley: 3 bunches
  • Tomatoes: 3
  • Chickpeas: 1 cup
  • Couscous: ½ cup

Instructions
 

  • Chop all the vegetables and add them to the chickpeas. Mix them together.
  • Soak the couscous in hot water for 10 minutes, then mix it with the rest of the tabbouleh ingredients.
  • Mix all the dressing ingredients together and pour them over the tabbouleh. Serve fresh.
