Couscous Tabbouleh
Couscous Tabbouleh is a nutritious side dish; it is rich in protein and vegetables and has a delicious, tasty flavor.

- For the Dressing:
- Lemon: 2
- Olive Oil: ¼ cup
- Salt: 1 teaspoon
- For the Salad:
- Parsley: 3 bunches
- Tomatoes: 3
- Chickpeas: 1 cup
- Couscous: ½ cup
Chop all the vegetables and add them to the chickpeas. Mix them together.
Soak the couscous in hot water for 10 minutes, then mix it with the rest of the tabbouleh ingredients.
Mix all the dressing ingredients together and pour them over the tabbouleh. Serve fresh.
