Coconut Semolina Cake

Ingredients
  

  • 1 cup fine semolina
  • ½ cup light butter at room temperature
  • 1 cup fat-free yogurt
  • 1 cup shredded coconut
  • 1 tablespoon sugar for diet
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • Maple syrup to taste, for sweetness

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a deep bowl, mix the semolina, vanilla extract, and baking powder.
  • Add the sugar and yogurt to the semolina mixture. Mix well until the sugar dissolves.
  • Add the butter and shredded coconut, and mix thoroughly.
  • Pour the Harissa mixture into a baking pan and let it rest for a few minutes.
  • Place the pan in the preheated oven for 30 minutes, or until the top is golden brown.
  • Drizzle the maple syrup evenly over the Harissa according to your taste. Cut into pieces and serve warm or cold.
