Coconut Donuts

Ingredients
  

  • For the Coating:
  • 50 grams coconut toasted and unsweetened
  • 2 tablespoons sugar substitute
  • For the Donuts:
  • 220 grams flour coconut flour
  • 2 tablespoons sugar substitute
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 4 eggs
  • 50 milliliters coconut oil
  • 100 milliliters almond milk unsweetened
  • ½ tablespoon vanilla extract
  • Oil as needed (for frying)

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • Lightly grease a donut pan with a little oil.
  • In a bowl, mix the coconut flour, sugar substitute, baking powder, and salt.
  • Add the eggs, coconut oil, almond milk, and vanilla extract. Mix the ingredients until you get a smooth batter.
  • Fill the cavities in the donut pan two-thirds full with the batter.
  • Bake the pan in the oven for 15 minutes until the edges are lightly browned. Then, let them cool completely.
  • Heat oil in a wide pan over medium heat. Add the donuts in a single batch and fry them for about one minute on each side.
  • In a separate bowl, mix the toasted coconut with the sugar substitute until combined.
  • Remove the donuts from the pan, then roll them in the toasted coconut mixture. Let them cool, then place them on a serving plate and serve.
