Fill the cavities in the donut pan two-thirds full with the batter.
Bake the pan in the oven for 15 minutes until the edges are lightly browned. Then, let them cool completely.
Heat oil in a wide pan over medium heat. Add the donuts in a single batch and fry them for about one minute on each side.
In a separate bowl, mix the toasted coconut with the sugar substitute until combined.
Remove the donuts from the pan, then roll them in the toasted coconut mixture. Let them cool, then place them on a serving plate and serve.
