Coconut Donuts

Ingredients
  

  • 4 eggs
  • 220 grams flour coconut flour
  • 100 milliliters almond milk unsweetened
  • 50 milliliters coconut oil
  • 2 tablespoons sugar substitute
  • 1 tablespoon baking powder
  • ½ tablespoon vanilla extract
  • ¼ tablespoon salt
  • Vegetable oil as needed (for frying)
  • 50 grams coconut toasted and unsweetened / for coating
  • 2 tablespoons sugar substitute for coating

Instructions
 

  • Lightly grease a donut pan with a little oil.
  • In a bowl, mix the coconut flour, salt, sugar substitute, and baking powder. Then add the eggs, vanilla, coconut oil, and almond milk. Mix the ingredients until you get a smooth batter.
  • Fill the cavities in the donut pan two-thirds full with the batter.
  • Preheat the oven to 180°C (350°F).
  • Place the pan in the oven for about 15 minutes until the edges are golden. Then, set it aside to cool.
  • Heat oil in a pan over medium heat, then fry the donuts for about one minute on each side.
  • In a separate bowl, mix the toasted coconut and sugar substitute until combined.
  • Remove the donuts from the pan, then roll them in the toasted coconut mixture. Let them cool, then place them on a serving plate and enjoy.
