Chicken Caesar Salad

- For the Salad:
- 1 chicken breast grilled and sliced
- 2 cups Romaine lettuce roughly chopped
- 1/4 cup keto bread made from almond flour
- 1/4 cup Parmesan cheese grated
- For the Dressing:
- 2 tablespoons lemon juice
- 2 teaspoons mustard
- 2 tablespoons olive oil
- 1 clove garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
In a small, deep bowl, mix the lemon juice, minced garlic, mustard, salt, pepper, and olive oil. Whisk well until the ingredients are combined.
Spread the chopped lettuce at the bottom of your salad bowl.
Arrange the keto bread and the sliced grilled chicken on top of the lettuce.
Drizzle the dressing over the top, sprinkle with the grated Parmesan cheese, and serve immediately.
