Cherry Ice Cream

Ingredients
  

  • 250 grams cherries
  • 200 grams ml coconut milk
  • 1 cup shredded coconut
  • 1 tablespoon honey or maple syrup for a fully vegan version
  • Zest of 1 lemon

Instructions
 

  • Place the cherries, coconut milk, honey, and lemon zest in a blender. Blend the ingredients at medium speed until a smooth mixture forms.
  • Add the shredded coconut to the mixture and continue to blend.
  • Pour the mixture into ice cream molds, placing a wooden stick into each one.
  • Put the ice cream in the freezer for at least 4 hours before serving.
