Celery Soup

- Cabbage: 1 cup chopped
- Carrot: 1 large
- Celery: 3 stalks
- Onion: 1 large
- Tomatoes: 2
- Water: 3 cups or as needed
- Salt: to taste
- Black Pepper: to taste
- Cumin: 1 teaspoon
- Coriander Powder: 1 teaspoon
- Bay Leaves: 2
- Lemon: slices for serving
- Parsley: to taste chopped / for garnish
Chop all the vegetables into medium-sized pieces.
Place the vegetables in a pot with the water, salt, black pepper, cumin, coriander powder, and bay leaves.
Let the mixture boil until the vegetables are completely tender.
Using an immersion blender, puree the vegetables until you get a creamy consistency.
Garnish the soup with lemon slices and chopped parsley.
Serve the soup hot.
