Cauliflower Soup
Cauliflower soup is a healthy, hot appetizer perfect for any table, especially for those following a diet.

- 200 grams cauliflower cut into small pieces
- 1 onion chopped
- 1 clove garlic minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1/2 cup skim milk
- Salt to taste
- Black pepper to taste
- Cumin to taste, optional
In a pot, heat a little oil, then add the onion and garlic. Sauté until they soften.
Add the cauliflower pieces and stir for two minutes.
Pour in the vegetable broth, and add salt, pepper, and cumin.
Cover the pot and let it cook over medium heat until the cauliflower is completely tender.
Using an immersion blender, puree the mixture until smooth and creamy.
Add the milk and stir well.
Serve the soup hot.
