- 1 head of broccoli cut into florets
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- A pinch of nutmeg
- 1/2 cup cooking cream
- 1/4 cup butter
Cook the broccoli in the microwave for 5 minutes.
Melt the butter in a pot over the stove. Add the broccoli, beef broth, and all the spices. Bring to a boil.
Add the cheese to the mixture and stir everything together.
Pour the soup into a blender and blend until smooth.
Return the blended mixture to the pot and cook on the stove for 2 more minutes.
Pour the keto soup into serving bowls and enjoy hot.
