Broccoli & Celery Soup
an easy and quick recipe for one of the most delicious, light, and beneficial broccoli soups.

- Butter: 1 tablespoon light
- Olive Oil: 1 tablespoon
- Celery: 1 stalk chopped
- Garlic: 2 cloves minced
- Green Thyme: 1 teaspoon or parsley / fresh and chopped
- Broccoli: 8 cups chopped
- Water: 2 cups
- Chicken Broth: 4 cups light and low-fat
- Salt: 1/2 teaspoon
- Black Pepper: to taste
In a pot over medium heat, heat the oil and butter. Add the onion and celery and cook, stirring, until they soften.
Add the garlic and thyme (or parsley) and stir for about 10 seconds.
Add the broccoli, followed by the water, broth, salt, and pepper. Let the soup simmer over low heat for about 10 minutes until the broccoli becomes very tender.
Blend the soup until smooth using a blender.
Serve the soup hot.
