Broccoli & Celery Soup

an easy and quick recipe for one of the most delicious, light, and beneficial broccoli soups.

Ingredients
  

  • Butter: 1 tablespoon light
  • Olive Oil: 1 tablespoon
  • Celery: 1 stalk chopped
  • Garlic: 2 cloves minced
  • Green Thyme: 1 teaspoon or parsley / fresh and chopped
  • Broccoli: 8 cups chopped
  • Water: 2 cups
  • Chicken Broth: 4 cups light and low-fat
  • Salt: 1/2 teaspoon
  • Black Pepper: to taste

Instructions
 

  • In a pot over medium heat, heat the oil and butter. Add the onion and celery and cook, stirring, until they soften.
  • Add the garlic and thyme (or parsley) and stir for about 10 seconds.
  • Add the broccoli, followed by the water, broth, salt, and pepper. Let the soup simmer over low heat for about 10 minutes until the broccoli becomes very tender.
  • Blend the soup until smooth using a blender.
  • Serve the soup hot.
