Broccoli and Feta Omelette

- 2 eggs
- 1 teaspoon vegetable oil
- 1 cup broccoli cut into small florets
- 2 tablespoons feta cheese crumbled
- ¼ teaspoon oregano
- Brown toast for serving (optional)
Heat the oil in a pan over medium heat. Add the broccoli and stir-fry for a few minutes.
In a bowl, beat the eggs well with the feta cheese and oregano.
Pour the egg and cheese mixture over the broccoli in the pan. Cook the omelette for about 5 minutes until fully cooked on both sides.
Transfer the broccoli and cheese omelette to a serving plate and serve with brown toast on the side.
