Broccoli and Feta Omelette

Ingredients
  

  • 2 eggs
  • 1 teaspoon vegetable oil
  • 1 cup broccoli cut into small florets
  • 2 tablespoons feta cheese crumbled
  • ¼ teaspoon oregano
  • Brown toast for serving (optional)

Instructions
 

  • Heat the oil in a pan over medium heat. Add the broccoli and stir-fry for a few minutes.
  • In a bowl, beat the eggs well with the feta cheese and oregano.
  • Pour the egg and cheese mixture over the broccoli in the pan. Cook the omelette for about 5 minutes until fully cooked on both sides.
  • Transfer the broccoli and cheese omelette to a serving plate and serve with brown toast on the side.
