In a pot on the stove filled with hot water, place the chicken with the onion, tomato, cardamom, bay leaves, salt, and black pepper. Let it cook over medium heat until fully done.
Once cooked, remove it from the heat, drain it well, and let it cool.
To prepare the sauce: In a food processor, thoroughly mix the tomato sauce with garlic, chili pepper, bell pepper, and chopped parsley.
Coat the boiled chicken with the sauce and leave it in the refrigerator for 30-60 minutes.
Brush the chicken with a little olive oil and place it in the oven until the top is browned. Serve the chicken hot.
