In a deep bowl, place the barley, flour, salt, yeast, and honey. Mix the ingredients well until combined.
Gradually add warm water while kneading for about 10 minutes, until you get a soft and cohesive dough.
Place the dough in an oil-greased bowl, cover it with plastic wrap, and let it rest for about two and a half hours until it rises and doubles in size.
Punch the dough to release the air, then knead it again. Place it on a baking sheet, cover it with a cotton cloth, and let it rest for an additional hour.
Preheat the oven to 180°C (350°F).
Place the dough on a baking tray lined with parchment paper and put it in the oven for 40 minutes until the bread is fully cooked.
Let the barley bread cool before serving.
