Avocado & Shrimp Salad

Try this easy and simple recipe for a diet salad with avocado and shrimp.

Ingredients
  

  • For the Dressing:
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • A pinch of black pepper
  • For the Salad:
  • 1 kg large shrimp
  • 2 avocados peeled and sliced
  • 2 tomatoes chopped into small pieces
  • Lettuce as desired
  • 1 onion finely chopped
  • A bunch of cilantro finely chopped

Instructions
 

  • Boil the shrimp in a pot of water until fully cooked.
  • Remove the heads, peel the shrimp, and set them aside.
  • Chop the lettuce and spread it evenly on a large serving plate. Add the tomatoes, onion, and avocado slices on top.
  • To make the dressing: In a small bowl, mix the lemon juice, olive oil, garlic, salt, and black pepper well.
  • Pour the dressing over the ingredients on the plate.
  • Add the boiled shrimp, sprinkle the chopped cilantro on top, and then serve.
