Arabic Salad

- For the Dressing:
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander dried
- 1 clove garlic small, minced
- For the Salad:
- 2 tomatoes medium
- 1 cucumber
- 1 head romaine lettuce medium
- 1/2 red onion
- 2 bell peppers red and yellow, small
- 1 carrot small, grated
- 1 bunch parsley fresh, chopped
- 2 sprigs mint fresh
Chop the lettuce into small pieces. Dice the tomatoes and cucumber. Thinly slice the onion and bell peppers. Chop the parsley.
In a small bowl, mix the olive oil, lemon juice, spices, and garlic to make the dressing.
Place all the vegetables in a large bowl. Pour the dressing over them and toss well until everything is combined.
Serve the salad chilled.
