Vegetable & Oatmeal Soup
It's made with simple ingredients you likely already have in your kitchen.
Ingredients
- 1 cup oats
- 1 tablespoon vegetable oil
- 2 cloves garlic minced
- 1 onion finely chopped
- 1 carrot cut into small cubes
- 1 zucchini cut into small cubes
- 1 head of broccoli cut into small florets
- ½ cup celery cut into small pieces
- 4 cups chicken broth
- Salt to taste
- Black pepper to taste
- A little fresh coriander chopped, for garnish
Instructions
- In a deep pot, heat the vegetable oil. Add the onion and garlic and stir until the onion softens.
- Add the carrot, zucchini, broccoli, and celery to the pot. Stir for about 2 minutes.
- Add the oats and broth to the vegetables. Season with salt and black pepper.
- Cover the pot and let the mixture simmer over medium heat for 20-25 minutes, or until the oats and vegetables are cooked.
- Serve the soup hot, garnished with chopped fresh coriander if desired.
