Ingredients
- 250 grams cherries
- 200 grams ml coconut milk
- 1 cup shredded coconut
- 1 tablespoon honey or maple syrup for a fully vegan version
- Zest of 1 lemon
Instructions
- Place the cherries, coconut milk, honey, and lemon zest in a blender. Blend the ingredients at medium speed until a smooth mixture forms.
- Add the shredded coconut to the mixture and continue to blend.
- Pour the mixture into ice cream molds, placing a wooden stick into each one.
- Put the ice cream in the freezer for at least 4 hours before serving.
