Ingredients
- Tuna: 1 can drained
- Eggs: 3 boiled and sliced
- Tomato: 2 diced
- Onion: 2 finely diced
- Arugula: 4 cups
- Olives: 1 cup
- Mayonnaise: ¼ cup light
- Mustard: 1 teaspoon
- Lemon Juice: 2 tablespoons
- Olive Oil: 2 tablespoons
- Lettuce: 1 cup leaves
- Salt: A pinch
- Black Pepper: A pinch
Instructions
- Place the tuna, lettuce leaves, tomato, onion, olives, and arugula in a serving bowl.
- In a separate bowl, mix the mayonnaise, lemon juice, olive oil, mustard, salt, and black pepper.
- Pour the dressing over the vegetables in the serving bowl and toss the ingredients until well combined.
- Place the boiled eggs on top and serve.
