Ingredients
  

  • 4 eggs

  • 1/2 cup spinach roughly chopped
  • 2 tablespoons light cheddar cheese grated

Instructions
 

  • Heat the butter in a pan over medium heat.
  • Whisk the eggs with the salt and black pepper.
  • Add the mushrooms to the pan and sauté for 5 minutes.
  • Add the spinach and stir for 2 minutes.
  • Pour in the eggs and stir until they are cooked to your liking.

  • Serve the eggs hot with toasted bread on the side.
