Scrambled eggs with vegetables is a distinctive breakfast dish, known for its high nutritional value.
Ingredients
- 4 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon light butter
- 1/2 cup fresh mushrooms sliced
- 1/2 cup spinach roughly chopped
- 2 tablespoons light cheddar cheese grated
Instructions
- Heat the butter in a pan over medium heat.
- Whisk the eggs with the salt and black pepper.
- Add the mushrooms to the pan and sauté for 5 minutes.
- Add the spinach and stir for 2 minutes.
- Pour in the eggs and stir until they are cooked to your liking.
- Add the grated cheese and let it cook for 2 more minutes until the cheese melts.
- Serve the eggs hot with toasted bread on the side.
