Ingredients
- 4 fresh eggs
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup skim milk
- 1 bell pepper any color, chopped
- 1 teaspoon cooking spray
Instructions
- In a large bowl, whisk the eggs. Add the salt, black pepper, and milk. Mix until all the ingredients are well combined.
- Add the chopped bell pepper to the egg mixture and stir.
- Heat a medium-sized pan over the stove and coat it with cooking spray. Pour in the egg mixture.
- Reduce the heat to medium-low. Cover the pan and cook until the eggs are almost set. Then, flip the eggs and cook for another minute to ensure they are fully cooked.
- Serve the eggs hot with toast on the side.
